If you follow me on Instagram or have had the opportunity to look at some of the videos I bookmark on my browser, you would know that I’ve got a bit of an obsession with mug recipes. I first discovered them when I was watching Popsugar Food, and a lot of excessive Googling and experimentation followed. I think mug recipes are just so handy, and they’re great if you’re a perpetually snacking monster like myself.
I snack so much.
As good things are meant to be shared, here are three of my fail-safe microwave mug recipes that I always fall back on when I’m feeling peckish at 2am on a Tuesday night. Or at any time, really.
#1- Cheese Omelette
You will need:
- 2 eggs
Crack two eggs into your mug
Beat the eggs
Add a pinch of salt and pepper
Microwave your mug for about 30 seconds
Take your mug out of the microwave, and add as much cheese as you like
Microwave for about another 40 seconds or until all your cheese has melted
#2- Mac & Cheese in a Mug (adapted from Kirbie’s Cravings)
You will need:
- ½ cup elbow macaroni
- ½ cup water or milk
- ½ cup shredded cheese
Add milk/water and macaroni into a large mug. For this recipe, placing the mug in a larger bowl is important, as it will overflow.
Microwave the mug for one minute, then remove from the microwave and stir to ensure the macaroni does not stick to the bottom. Repeat this process until your macaroni is cooked. How long it takes depends on the power of your microwave.
If you used water, after your macaroni is cooked, drain out the water. If you used milk, it is fine to just leave it in the mug.
Add as much cheese as you like, along with a pinch of salt and pepper, and stir to mix it in. If the cheese does not melt fully, return the mug to the microwave for another 20 seconds, before stirring it in till all the macaroni are coated in cheese.
Eat immediately and enjoy!
#3- Simple Cake in a Mug (adapted from Gemma Stafford)
*This recipe yields two mugs worth of cake
You will need:
- 2 tablespoons butter
- 1 large egg
- 2 tablespoons milk
- 1 teaspoon pure vanilla extract
- 4 tablespoons granulated sugar
- 6 tablespoons self-rising flour
- Chocolate chips, M&Ms, nuts, rainbow sprinkles or anything you would like to add to your cake
Microwave butter in a large mug until it is all melted
Let the butter cool a little before adding egg and whisking it in with a fork
Stir in milk, vanilla, and sugar
Add the flour. If you used unsalted butter, add a pinch of salt at this stage. Mix the batter with a fork until smooth.
If you have any extra ingredients, such as chocolate chips, mix them into the batter.
Separate the batter into two mugs and microwave them separately for about one minute until the cakes are fluffy.
Enjoy your fluffy cake!
